What is new kosher cuisine?

Helen Nash — known for being an innovator in the field of kosher cooking — answers this question in her new cookbook, HELEN NASH’S NEW KOSHER CUISINE (Overlook Press Hardcover; $35; September 2012), which features over 200 mouth-watering recipes that are as modern as they are nutritious. Her recipes are perfect for weekday dinners, holidays meals and all kinds of entertaining.  My personal favorites include the Baked Eggplant with Ground Meat, Tomatoes, and Pine Nuts, the Spinach Pie, and the Chick Pea and Feta Salad.
